February 11 was World Happy Day to celebrate the movie and spread Happiness to those around us

Did you do something saturday that made you happy?

In the memory of an old friend and soccer team mate I spent the day doing things that make me happy

I went to a food truck and got a breakfast calzone - it was delicious and I got to stand inside the truck and visit with the chef while he made it for me!!

I also had a date with the boyfriend so that was fun!

Oh and the Calgary Flames beat the Vancouver Canucks.... that ALWAYS makes me happy :)

Recipe Tuesday: Roasted Potatoes

Roasted Potatoes

I made one of these sunday night for dinner

It was really easy and really tasty!

I think potatoes might be a new go-to dinner item for me.

Microwave a pierced potato for 6-7 minutes, turning every 1-2 minutes

[I did 7 minutes... I think it was a little long]

Cute the potato in half, and the cut into squares without cutting all the way through

Butter the potato and sprinkle with seasoning salt and parmesan

Place on a foil lined pan [easy clean up!]

Broil on high, on a medium rack for 10-15 minutes.

I can't believe its already Thursday. I have hardly been able to move off the couch all week after suffering from a nasty stomach flu so I haven't got a lot done! Hopefully I can make it up today and a bit over the weekend

I love festivities so I am looking forward to The Super Bowl. Im hoping someone will invite me over to watch the game, and Im hoping I'll be able to eat some yummy snacks!!

Recipe Tuesday: Frozen Banana "ice cream"

I came down with a stomach virus early early sunday morning and haven't had anything but ginger ale and jello ever since... but I wish I had some of this in my freezer!

Simple freeze a banana and then combine with 2TBSP of cocoa powder, blend until smooth.

Sounds yummy.

I love travel stories!!

1. My favorite place i've ever traveled to is Greece for sure. I would go back in a second. My boyfriend makes fun of me for always talking about it and wanting to eat greek food - I went over 6 years ago!! He says I should have been born there .

2. Bali is somewhere I'd love to go someday.

3. I pass the time on a plane (or bus, or car ride or train) by sleeping. Seriously, I can sleep anywhere any time. .

4. My three must-haves when I travel are a book , snacks and a cozy blanket

5. My favorite travel companion is anyone who can stand to travel with me!! .

6. The craziest thing that ever happened to me while traveling is after landing in Rhodes Greece my 3 of us got put in one cab - with another lady!! And 3 got put in another cab and then the two cars took off in opposite directions!! We dropped the other lady off somewhere and then finally started to head in the direction of our hotel when the cab got a flat tire!! The driver tried to continue driving until we yelled at him to stop!! When he tried to jack up the car, it was so hot out the ash-fault just caved in. We ended up walking the few more blocks to our hotel with all our luggage. The other 3 were happy to see us when we finally showed up at the hotel!!! .

7. The most exotic food I've ever tried while traveling is Crocodile while in Arizona, maybe thats not that exotic but it was to me! .

8. If I could live anywhere else, I'd live in Australia!! .

9. I have been to nine states in the U.S

101 in 1001 update

Tasty Tuesday: Oven Baked Chicken Fajitas

On Friday I made these Oven Baked Chicken Fajita.s
Sometimes fajitas seem like a lot of work right?
All the chopping, cooking the chicken, cooking the veggies, grating the cheese...
Well Fajitas just got simplified thanks to the genius of Real Mom Kitchen

I bought chicken breasts already cut into strips, and fajita spice from the mexican aisle at safeway...

Put chicken strips in a 9x13 pan

Mix fajita spice, a couple table spoons of olive oil and some water until its runny - pour over chicken

Chop up half a green pepper, half a red pepper, half an onion, and a medium tomato... (or more if you like)

Mix it all up

Bake at 400 for 20-25 minutes.

So simple... and it can be prepped before hand and stored in the fridge until dinner time!

Add a little bit of sour cream, guacamole and salsa on a warm tortilla and you've got dinner!

Tarin spoke with Henry on the phone Thursday evening and he was really excited about school.

I love this poster Take What You Need. I had seen it on Pinterest before and shared the idea with a group of girls I was working with on monday. I was with the wellness group and a junior high school - they call it Glee Club - and we were trying to figure out easy ways to make the school more positive. And they loved this idea. So do I! I think it would be hard not to smile if you saw this poster.

It has been way too cold out. It has been hovering around -30 for about 4 days now (thats about -22F for any american readers!! And with windchill it has been about -40 (which is the same in C and F - how about that). I don't mind a little wintery weather but this is ridiculous!!!

Breakfast smoothies are amazing. I made a huge batch Monday night with frozen fruit, greek yogurt, water and juice, oatmeal, and spinach, and I've been happily drinking it every morning this week. It feels so nutritious and since it's already made its really quick!

I just finished reading Little Bee. I know, its a bit behind since everyone seemed to read it about a year ago. I really liked it...Anyway, you aren't supposed to tell anyone about the book except that they should read it. And I think you should. It stirs up a lot of questions.

I love my french press for making coffee. With a little sprinkle of cinnamon in with the coffee grounds before it brew = perfection.

10 Years Younger....

So last week I briefly mentioned that someone thought I was in junior high.
With my work, I was in a junior high in a class when the student guidance counsellor asked me if I was working on my project...
I replied No, I am a consultant here working with the class....
Then I got to hear her telling the teacher in the hallway that she thought I was a student...

So the kids in the class were between 12-14.... Im 24.
Awesome.
I know most people would love to look 10 years younger but at this point in my life, not so much!!

To make myself feel better, I have come up with a list of celebrities that also look very young!!

Eggs and Avocados!!

Ok. Am I the only one who was absolutely blown away by this??

I love eggs and I love avocados.

This is baked avocado with eggs.

And it couldn't be any more simple

Preheat the oven to 425F, cut open an avocado and remove the pit

Crack an egg into each side of the avocado, put it on a pan and pop it in the oven!

Bake until eggs are done how you like them!

I will be doing this.

Tasty Tuesday: Chicken Salad

Healthy Chicken Salad from Whole Living

I made a batch of this chicken salad for easy lunches and dinners during my first week back at school/work

And it is tasty.

Ingredients

1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 pound (2 small whole breasts) boneless, skinless chicken breasts
3/4 cup plain nonfat yogurt
1 tablespoon Dijon mustard
2 tablespoons freshly chopped chives
1 tablespoon freshly chopped tarragon
1 Granny Smith apple
Juice of 1/2 lemon
1 cup finely diced fennel
1/2 cup finely diced celery
2 cups red seedless grapes, cut in half
6 slices pumpernickel bread
1 bunch watercress, tough stems removed
Olive-oil cooking spray

Directions

Combine salt and pepper in a bowl. Heat a large saute pan over medium-high heat. Coat with cooking spray. Sprinkle chicken with some of the salt mixture; place in saute pan. Reduce heat to medium; cover. Cook until chicken is cooked through, about 12 minutes (flip halfway through cooking time). Remove from pan; set aside.
In a bowl, combine yogurt, mustard, chives, tarragon, and remaining salt mixture. Core the apple, and cut into 1/4-inch dice. Place in a medium bowl with lemon juice, and toss to combine. Add fennel, celery, and grapes. Cut reserved chicken into 1/2-inch pieces. Add to salad with yogurt dressing; stir to combine. Serve on pumpernickel bread, open-faced, with watercress.

2012 New Beginnings

Its back to university today.

It has been a great winter break.

My break was absolutely packed full of fun stuff with friends and family

christmas lights, baking cookies, shopping, going to banff, snowboarding, coffee dates, dinner dates, world junior hockey games, photo booths, secret santa, good food, tasty desserts, new years eve

I couldn't have asked for a better christmas break!

Now its time to get the New year underway!!

Now I am going back for my last semester of Kinesiology.

Today is my first day of my Work Term

I can't wait to spend the semester with the girls at Be Fit For Life

I will be teaching school children about healthy eating, active living and mental resilience

I know this is just the first of many adventures that 2012 has for me!

Tasty Tuesday: Creamy Avocado Pasta

I made this delicious 15 minute creamy avocado pasta Sunday night.

from Oh She Glows

Its super rich and creamy and it was really easy to make.

Throw all the stuff for the sauce in a blender or food processor while the pasta cooks

Then mix it up with your pasta and enjoy!

I will definitely be making this again!

ingredients:

1 medium sized ripe Avocado, pitted
1/2 lemon, juiced + lemon zest to garnish
2-3 garlic cloves, to taste (I used 2 and it was quite garlicky)
1/2 tsp salt, or to taste
~1/4 cup Fresh Basil
2 tbsp extra virgin olive oil

2 servings/6 oz of your choice of pasta (I used whole wheat spaghetti)
Freshly ground black pepper, to taste

1. New Years is a fun night to spend with friends, a fresh new start, .

2. One of my New Year's resolutions will be to de-clutter - I need to start getting rid of stuff. Time to sell, store, throw or give away. .

3. A New Year's resolution I've made in the past was to de clutter haha I actually succeeded in donating 3 huge bags of clothes this year. Another goal was torun 10Km...still working on that, .

4. The most time consuming resolution I ever made was I don't really remember most of my resolutions... If I followed a 10km running plan it would probably take up a lot of time. .

5. This year I will be spending New Year's Eve Not totally sure, the plans have been falling apart.. which is funny because Im watching the How I Met Your Mother episode right now about how New Years sucks... it looks good on TV but in reality something always goes wrong. Either way I will likely be spending it with friends so it doesn't really matter .

6. If I could wish one thing for my new year it would be to get accepted into grad school .

7. 2012 is going to be exciting, and scary... finishing my degree, applying to grad school, preparing to move... it's going to be a big one!! .

It's Christmas Time: Fill in the Blank

1. The best way to spread Christmas cheer is obviously by "singing loud for all to hear" :) Not only is it a quote from the greatest christmas movie of all time Elf... it true! All month I have been posting christmas music lyrics on facebook and the response has been great!! .

2. The thing I love most about Christmas is spending time with family, fun christmas activities like going out to look at lights, decorating gingerbread houses or gingerbread men, decorating the tree... .

3. The holiday season is a time for spending time with friends and family and appreciating what you have .

4. My favorite thing to eat at the holidays is fudge. Gramma always makes the best fudge and sends us out a box. It definitely says Christmas to me. We have tried to make it and it never works, it's gotta be grammas! .

5. I will be spending Christmas with my family. As many and as much family as I can fit in a couple days! I also will be spending christmas time with my boyfriend a few days after christmas, and have christmas dates planned with friends! What a joyful fun filled time of year!! .

6. Tis better to (give or receive?) give. I love finding a present for people that I think they will like and wrapping it up and watching them open it! Buuut I also like getting things.. who doesnt!?

7. I'm dreaming of a peaceful, relaxing, fun and love-filled Christmas.

Sopapilla Cheesecake,

I am making this to take to a work christmas pot luck today.

Dough, Cheese cake filling, cinnamon sugar - I hope its as delicious as it sounds!

The recipe is from My Yellow Umbrella

(if you click the link you can find how to make the recipe less un-healthy)

But Im posting the full deal recipe because its dessert and its christmas and thats how I like my dessert.

Ingredients:
-3 cans pillsbury butter crescent rolls
-2 (8oz) packages cream cheese (softened)
-1 cup sugar
-1 teaspoon vanilla
-1/4 cup butter (melted)
-Cinnamon & sugar

Instructions:
Unrolled and spread 1 and 1/2 can crescent rolls on bottom of un-greased pan. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

but what I really wish I was eating is the delicious looking

Honey Mustard Chicken with Thyme

with sides like broccoli and rice...

I think my brain is screaming out for a nice home cooked meal.

Honey-Mustard Chicken with Thyme

loosely adapted from Bon Appetit

Ingredients
1/2 cup honey
1/4 cup dijon mustard
3 tablespoons white wine
3 tablespoons canola oil
1 tablespoon red wine vinegar
2 teaspoons fresh thyme leaves
1/2 tsp each salt and pepper
1 whole chicken, broken down into pieces and backbone removed, or 1.5 lbs boneless skinless chicken thighs

Directions

Place the chicken in a single layer in a container. In a medium bowl, mix together the marinade ingredients — honey through salt and pepper. Pour the marinade over the chicken, cover and refrigerate for at least 1 hour and up to 4 hours.

To bake, preheat the oven to 425 degrees and take the chicken out of the fridge while the oven preheats. If the chicken has not been marinating in the dish you’re going to bake it in, transfer it along with its marinade to a baking dish. I like to use a ceramic 9×9 casserole dish, or a 9×13 pyrex dish. There will be lots of marinade, and that’s okay (you’ll boil it and use it as a sauce later.)

Bake the chicken until the sauce is bubbling and the meat is cooked through, about 20-25 minutes for boneless skinless thighs, flipping the pieces halfway through. Turn on the broiler and broil the chicken for about 5 minutes (I keep the pan on the rack about 8 inches from the broiler – not the very highest level) until starting to brown in spots. You’ll want the marinade to be briskly bubbling and boiling for at least 5 minutes.

Serve, spooning the sauce over the chicken.

Serves 4-6.

Tasty Tuesday: Pickles

I have a confession. I love deep fried pickles.

But what I love even more... these ones are baked!!

They looks so tasty I can't wait to try them

Ingredients

1 jar pickle slices
2 eggs
1/3 cup flour
1 Tbsp Worcestershire sauce
1 tsp hot sauce
1 tsp garlic powder
1 tsp Cajun seasoning
1 tsp pepper
1 1/2 cups panko bread crumbs
Ranch dressing + hot sauce for dipping

Directions

Turn oven broiler on high.
In a medium bowl, whisk together eggs and flour. Add Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and pepper. Mix well.
Place panko bread crumbs in a shallow dish. Dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
Place coated pickles on a rack set above a baking sheet and sprayed with non-stick cooking spray. Place pan in the middle rack of the oven. Broil for about 3 minutes on each side.
Serve with Ranch dressing and a dash of hot sauce.

Warm Gingerbread Cake with Caramel Sauce

I made this cake sunday night before my really late soccer game, Im talking takes up two days on my calendar late

And even though I ate a piece about an hour before and felt really sick the whole game

It was totally worth it.

It was moist, and gingery.

It was christmas in my mouth.

And the caramel was life changing...

Here's the recipe

Cake:
1 3/4 cups flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon grated nutmeg
6 tablespoons butter
2/3 cup brown sugar
1/2 cup molasses
1 egg
1/2 teaspoon vanilla
2/3 cup boiling water

Cake:
Grease an 8 inch square pan. Preheat oven to 325 degrees F.
Mix the flour, baking powder, soda, salt, and spices together. Cream the butter, gradually add the brown sugar and cream thoroughly. Stir in molasses.
Beat egg until thick, and beat into the creamed mixture. Stir in the vanilla.
Add the dry ingredients to the creamed mixture a third at a time, mixing well after each addition.
Gradually add boiling water, stirring after each addition. Turn into prepared pan.
Bake for about 50 minutes. Serve warm with lemon sauce.

Caramel Sauce
1 cup butter
1 cup sugar
1 cup brown sugar
1 cup cream
pinch of salt
2 teaspoons vanilla

Mix all the ingredients together and simmer for about 5 or 6 minutes.

Serve on warm gingerbread, ice cream, spoons, fingers... everything.
